----------------------------------------------- She used to fry sweet peppers in olive oil (not sure what their name was but they were long skinny and yellow and red oeppers(The Cubanelle, also known as "Cuban pepper" and "Italian frying pepper") ), sometimes with and sometimes without italian sausage, then when it was cooked she would add some beat eggs and cook it all together. She always made alot because she liked it leftover and cold on a sandwich with lots of mayo! It was delicious. I make it once in awhile when i find those peppers. Nan always made it too. Get 2 sweet italian sausage and slice into rings, get 3 or 4 italian sweet peppers (6 or 7 inches long and yellow or red) (or some other sweet pepper but not bell peppers it doesnt work with them) and slice them into rings or chop, then fry them and the sausage together in olive oil. When they are all cooked add 2 or 3 beat eggs and scramble all together. That's it! It's good hot, but better the next day cold in a sandwich with mayo!!!
